Here is a new recipe of a matcha cake, its particularity is that it is without wheat flour, light and easy to make.
We had already posted 2 recipes of matcha cake:
- a matcha cake very greedy, because it is rich in egg and fresh cream.
- a matcha cake with white chocolate and almond powder, this one is more varied.
and here we offer you a third lighter recipe, without wheat flour.
Why without traditional wheat flour? For several months now, we have not been eating wheat. We are not allergic to it but we realized that like many people, we do not digest it very well, so we wanted to create a matcha cake recipe adapted to it!
For the ingredients, we used organic matcha green tea powder and spelt flour. As for the matcha green tea, make sure you use cooking tea and not tasting tea, it would be a shame.
The small spelt flour will be more adapted for cakes, its taste is really close to the one of the more classic wheat.
Tip: for baking powder, you can use baking soda, one teaspoon = 1 packet of baking powder.
Matcha cake recipe without wheat flour
Ingredients
- 150 g spelt flour
- 10 g matcha powder
- 170 g sugar
- 1 yogurt
- 1/2 package baking powder
- 2 eggs
Instructions
- Preheat your oven to 180° (thermostat 6). Butter and flour a cake tin.
- In a bowl, whisk the eggs and sugar together briskly. You will see your mixture whiten. Then add the yogurt, flour, yeast and mix again. Concerning the whisk, we advise you the one from De Buyer which is really good to mix and make the mixture airy and light.
- You will have a smooth, lump-free paste. Add your matcha tea powder and mix well.
- Place your dough in the cake pan and bake for 35 minutes at half height. To check if your cake is cooked, prick it in the center with a knife and check that the blade comes out clean. If you see raw dough on the blade, your cake is not cooked enough. Once cooked, enjoy it immediately with a tea. For those with a sweet tooth, you can serve it with salted butter caramel and homemade whipped cream for example.
For this cake, we added some salted butter caramel, by adding some pieces in the dough before putting it in the oven, it mixes very well with the matcha, a delight. The salted butter caramel is really simple to realize and keeps very well in the refrigerator, we share you our recipe.
Homemade salted butter caramel recipe
Ingredients
- 100 g sugar powder
- 20 cl 30% liquid cream
- 50 g soft butter
- 1 pinch salt flower
Instructions
- Put your sugar in a saucepan and spread it out evenly. Put the pan on medium heat and watch it carefully. It is imperative that you do not let it turn brown, otherwise it will be bitter. Do not try to stir the melting sugar with a spatula or other spoon, but rather turn the pan to even out the forming caramel.
- Once the caramel becomes golden, remove it from the heat for a moment and add the cream that you have previously heated. Pour it slowly so as not to splash.
- Once the cream is poured in, begin to gently stir the caramel with a whisk and add the butter.
- Return the pan to the heat and stir constantly to dissolve the caramel bits.
- Once the mixture is smooth, you can pour it directly into a glass jar with a spatula. Let it cool down to room temperature and store it in the refrigerator.
