Ingredients
  

  • 100 g sugar powder
  • 20 cl 30% liquid cream
  • 50 g soft butter
  • 1 pinch salt flower

Instructions
 

  • Put your sugar in a saucepan and spread it out evenly. Put the pan on medium heat and watch it carefully. It is imperative that you do not let it turn brown, otherwise it will be bitter. Do not try to stir the melting sugar with a spatula or other spoon, but rather turn the pan to even out the forming caramel.
  • Once the caramel becomes golden, remove it from the heat for a moment and add the cream that you have previously heated. Pour it slowly so as not to splash.
  • Once the cream is poured in, begin to gently stir the caramel with a whisk and add the butter.
  • Return the pan to the heat and stir constantly to dissolve the caramel bits.
  • Once the mixture is smooth, you can pour it directly into a glass jar with a spatula. Let it cool down to room temperature and store it in the refrigerator.
