After the okonomiyaki and the takoyaki we present another popular Osaka dish, the kushikatsu also called kushiage, breaded skewers to be dipped. Presentation:
Kushikatsu, popular breaded skewers
Kushikatsu 串カツ or kushiage is a skewer breaded in panko (Japanese breading). The ingredients can be varied, meat, seafood, vegetables, you can also find to quail eggs, dumplings, cheese… The most popular ones are with meat and vegetables.
The ingredients are skewered on bamboo skewers called kushi. They are coated with flour, eggs and panko and then dipped in hot oil.
The taste is very similar to tonkatsu, fried pork, but here there is more variety in the ingredients. Our preference is for the corn kushikatsu, original and delicious!
They can be served directly, with BullDog tonkatsu sauce or worcestershire sauce.
The sauce of the kushikatsu
It is important to know that the sauce is shared with all the customers! It is therefore forbidden to dip your kushikatsu in the sauce again because of lack of hygiene. Generally, when you dip your kushikatsu you put enough on it, but if you realize that there is not enough after tasting, you have cabbage available. You use it as a spoon to take some more sauce and it also helps the digestion.
The sauces can be the worcestershire sauce mentioned above and you can also find a miso based sauce, a tartar sauce, … depending on the restaurant.
