Takikomi Gohan is a family friendly dish which is usually eaten in autumn when shiitake mushrooms are very present on the supermarket stands. We share with you our recipe for Takikomi Gohan, a generous and very fragrant bowl of rice. It is a simple and quick recipe:
The utensils for the recipe of takikomi gohan
To cook our takikomi gohan we use a rice pressure cooker, it’s very convenient, fast, and no need to watch it. We bought this one: Cuisinart. It is quite complete because you can also cook other grains like bulgur, lentils, quinoa ect. It comes with a steam basket to cook vegetables or other. We are very satisfied with it, we took the small model which is more for 2 or 3 people, it also exists in a larger version.
You will also need a rice spatula to mix the ingredients without crushing the rice.
Recipe Takikomi Gohan

Ingredients
Légumes et viandes
- 1 glass Japanese white round rice
- 6 shiitake mushrooms
- 1/2 carrot
- 1/2 burdock
- 1 small piece of ginger (facultatif)
- 1/3 konnyaku or konjac paste
- 150 g meat or fish
- 1/3 abura age (fried tofu pocket)
Sauces
- 200 ml dashi
- 1 tbsp sake
- 1 tbsp soja
- 1/2 tbsp mirin
Instructions
- Rinse the Japanese rice until the water runs clear
- Finely chop the ingredients, julienne the carrots, thinly slice the abura age (fried tofu) and dice the ginger. Then slice the shiitake mushrooms and konnyaku (konjac). Make 3 cm cubes for the meat or fish.
- Prepare your dashi, and add it to the rice. Then add the sake, soy sauce and mirin and mix with a chopstick. Don't hesitate to add water if necessary.
- Then in order, put the meat or fish, carrots, konjac, abura age, shiitake mushrooms.
- Be careful not to mix the ingredients with the rice. Turn on your pressure cooker and wait.
- Once cooked, mix the ingredients with the rice with a spatula and serve in Japanese bowls.
- You can add chives or fresh onions for decoration.
Tips for Takikomi Gohan recipe:
You can of course use other ingredients, the main thing is to have:
- a meat (beef, chicken..) or a fish (salmon, white fish, shrimps ect)
- a crunchy vegetable: carrot, bamboo shoots…
- a melting vegetable: burdock, sweet potato, chestnuts, peas…
- You can also add hijiki seaweed, delicious in this rice mixture.
To avoid missing your rice, here is a tip:
After rinsing your rice well, add a little water to compact the rice and make it flat then place your index finger on the rice. Add water until it reaches the first line of your index finger. Your rice will be neither too sticky nor too dry!
