Takikomi gohan, a simple dish in its realization
Takikomi gohan 炊き込みご飯 is a Japanese rice dish mixed with vegetables, mushrooms, seafood, fish or meat. In Osaka, this dish is called kayaku gohan 加薬御飯. This is a dish that brings a lot of flavor and variety to plain rice. It is usually seasoned with Japanese broth, the dashi and shoyu soy sauce . It is a very easy dish to prepare since it is cooked in a rice cooker. All the ingredients are cooked together. The rice absorbs the flavors of the ingredients. To prepare, simply put your raw rice in the pressure cooker, then your dashi. Then place your ingredients on top. It is important not to put too many ingredients, you have to find a balance. The pressure cooker does the rest. Once everything is cooked, you can mix your dish with a rice spatula and serve it in a Japanese bowl.
You can also make this dish on the stove with a large oval casserole dish. A tip: soak the rice in water for 30 minutes beforehand.
This dish is usually served with miso soup, cooked or raw fish, vegetables, rice, rice balls, or other foods tamagoyaki (Japanese omelette), small side dishes (tsukemono) and green tea. It can also be used as a main dish, it will be served in a large bowl. It is a dish that can be eaten both hot and cold.
