Japanese style sweet pancakes
Japanese pancakes are a variation of our French pancakes with more freshness and greediness in their filling. They are very present in Tokyo, especially in Harajuku or during matsuri and you have a lot of different flavors for the most part sweet.
Japanese pancakes are presented in cone shape to be able to carry them easily. The fillings are based on whipped cream, fruits, ice creams and sweet sauces…
The recipe is very simple, everything is in the folding of this pancake.
Recipe for sweet Japanese pancakes in cones
Ingredients
Pancake batter
- 3 eggs
- 250 g flour
- 1 pinch salt
- 50 cl milk
- 3 tbsp sugar
- 2 tbsp oil
Topping
- Ready-made or homemade whipped cream. If you want to make it yourself: 20cl of full cream + powdered sugar. Remember to put your whisk and bowl in the fridge 30 minutes beforehand and whip the whole cream electrically, adding the powdered sugar little by little.
- thinly sliced fruits like strawberries, kiwi, bananas...
- Vanilla, chocolate, lemon ice cream... according to your taste (optional)
- Chocolate, salted caramel, strawberry sauce... according to your taste (optional)
- Des morceaux de brownies gâteaux, biscuits, spéculos... selon vos goûts (facultatif)
Instructions
- In a bowl, beat the eggs into an omelette with a fork.
- In a salad bowl, pour the flour and salt, mix then dig a well in the center to pour half the milk (25cl). Mix again.
- Add eggs, sugar, oil and remaining milk. Mix with a whisk until you obtain a fluid paste. The pancake batter is ready!
- Oil your pan with a paper towel. When the pan is hot, pour a ladleful of the pancake batter into the center and tilt to distribute the batter. If you are equipped, it is best to spread with a special spatula. As soon as the edges come away, flip your crepe with a flat spatula or by popping it to cook the other side.
- When your pancake is cooked, place it on a round plate, then place your filling:
- We start by putting whipped cream in a V shape. Then, in the center, place your cut fruit. In the corner, a scoop of ice cream and sprinkle with sauce, sprinkles, cookies ...
- Folding: Fold in 2 your pancakes but not edge to edge, leave a 10 cm margin with the other edge.Your filling must be placed on the right side leaving a margin of empty on the side.Take the right side and fold on the filling. Then roll it up to meet the other end.it forms a cone! Now your japanese crepe is ready!
Our tips and tricks to make your Japanese pancakes
- Prepare large pancakes (24cm to 30cm) to be able to fold them easily. You can also prepare your pancake batter in advance and let it rest in the fridge.
- Don’t put too many fillings because it will make the crepe too heavy.
- Folding is very simple, you just need to understand the different steps. Here is a video:
- Wait for your pancakes to cool down before putting your fillings, otherwise the whipped cream will melt quickly!
- In Japan, you can find a savory version, with salad, meat, cucumber… why not! The dough remains the same (it’s not buckwheat flour), you just have to replace one of the 2 tablespoons of sugar by a teaspoon of salt.
