If you're in the mood for something sweet and savory, try this Japanese-inspired pizza. It is topped with teriyaki chicken, onions, mushrooms, a drizzle of soy sauce, mirin and nori.

Ingredients
  

Ingredients for the garnish

  • 1 chicken breast
  • 1/2 onion white or red according to your preference
  • 2 white mushrooms cut into strips
  • slices of nori
  • grated cheese

Ingredients for the teriyaki sauce

  • 1 garlic clove
  • 2 tbsp shoyu soy sauce or tamari soy sauce for gluten free
  • 2 tbsp of mirin
  • 2 tbsp of saké or white wine for cooking

Ingredients for the pizza dough

  • 100 g Gruau flour
  • 1 tbsp olive oil
  • 50 ml warm water
  • 1 pinch of salt
  • 1/4 dry baker's yeast for pizza or bread

Preparation of the pizza dough

  • In a bowl, add the flour, the yeast on one side, the salt on the other, and the olive oil. Start mixing, adding the warm water little by little until you get a ball of dough.

  • Let rest for at least 1h30 under a damp cloth. Do not hesitate to adjust the flour and water, the dough should not stick to your fingers and should be soft like a modeling clay.

Preparation of the garnish

  • In a bowl, make the teriyaki sauce by mixing the soy sauce, mirin, sake and grated garlic.
    Coarsely chop the chicken fillet and cut the onions into strips.

  • In an oiled skillet heated over medium-high heat, brown the chicken on one side first, then add the onions on top. Mix with a spatula and add the teriyaki sauce on top.
  • Toss with your spatula to coat the sauce on the chicken, you will see the onions absorb the juice. Cook for a good 5 minutes, the sauce will decrease.
    Turn off the heat, there should be some sauce left at the bottom of the pan.
    (If you don't have any juice left, I advise you to make a little more and reduce it by half on the heat).
    Cut the chicken in small pieces, if the chicken is not cooked completely it is not serious because the cooking will continue in the oven.

  • Preheat your traditional oven to 210 degrees or to position 2.5 on the GFerrari oven.
    On a floured work surface, place your pizza dough, and roll it out with a rolling pin to a round thickness of about 3 mm.

  • Spread the onions and chicken pieces with a little sauce over the dough, followed by the mushrooms and then the grated comté.

  • Add a teaspoon of teriyaki sauce on top.

  • Bake your pizza for 8 to 10 minutes at 210 degrees or 2 to 3 minutes in the GFerrari oven while keeping a close eye on the cooking process. If you use the GFerrari oven, wait until the red light disappears, then, when you put your pizza in the oven, put it on position 3. When you take out the oven, add some nori slices. Enjoy your meal!
