If you like teriyaki sauce, you will really love this Japanese pizza. The chicken is topped with teriyaki sauce, mixed with onions, mushrooms, then covered with cheese and finally baked and served with some nori slices. Although unusual, this pizza will be an instant hit with your family or friends! Actually, it is our relatives and friends who insisted that we publish this Japanese recipe they are really fond of.
This pizza has no tomato or cream base but only a teriyaki sauce base which really changes from the classic Italian pizza. An Italian dish revisited by the Japanese just like the spaghetti naporitan that we love!

For baking, we recommend a GFerrari pizza oven, which reaches over 400°C and bakes the pizzas beautifully in just 3 minutes. They taste just like in a restaurant! Moreover, this oven does not take up any space and can easily be stored in a cupboard
Originally from Italy, I use the best for pizza and I clearly recommend this oven to all those who love good pizza. Of course you can always use a classic oven, but in this case I advise you to add a refractory stone.
For the flour, we use Gruau flour, we find our pizzas much lighter and crispier
For gluten free, we have tried Schär special bread flour which works very well for making pizza dough.
Japanese chicken teriyaki pizza recipe

Ingredients
Ingredients for the garnish
- 1 chicken breast
- 1/2 onion white or red according to your preference
- 2 white mushrooms cut into strips
- slices of nori
- grated cheese
Ingredients for the teriyaki sauce
- 1 garlic clove
- 2 tbsp shoyu soy sauce or tamari soy sauce for gluten free
- 2 tbsp of mirin
- 2 tbsp of saké or white wine for cooking
Ingredients for the pizza dough
- 100 g Gruau flour
- 1 tbsp olive oil
- 50 ml warm water
- 1 pinch of salt
- 1/4 dry baker's yeast for pizza or bread
Instructions
Preparation of the pizza dough
- In a bowl, add the flour, the yeast on one side, the salt on the other, and the olive oil. Start mixing, adding the warm water little by little until you get a ball of dough.
- Let rest for at least 1h30 under a damp cloth. Do not hesitate to adjust the flour and water, the dough should not stick to your fingers and should be soft like a modeling clay.
Preparation of the garnish
- In a bowl, make the teriyaki sauce by mixing the soy sauce, mirin, sake and grated garlic.Coarsely chop the chicken fillet and cut the onions into strips.
- In an oiled skillet heated over medium-high heat, brown the chicken on one side first, then add the onions on top. Mix with a spatula and add the teriyaki sauce on top.
- Toss with your spatula to coat the sauce on the chicken, you will see the onions absorb the juice. Cook for a good 5 minutes, the sauce will decrease.Turn off the heat, there should be some sauce left at the bottom of the pan.(If you don't have any juice left, I advise you to make a little more and reduce it by half on the heat).Cut the chicken in small pieces, if the chicken is not cooked completely it is not serious because the cooking will continue in the oven.
- Preheat your traditional oven to 210 degrees or to position 2.5 on the GFerrari oven.On a floured work surface, place your pizza dough, and roll it out with a rolling pin to a round thickness of about 3 mm.
- Spread the onions and chicken pieces with a little sauce over the dough, followed by the mushrooms and then the grated comté.
- Add a teaspoon of teriyaki sauce on top.
- Bake your pizza for 8 to 10 minutes at 210 degrees or 2 to 3 minutes in the GFerrari oven while keeping a close eye on the cooking process. If you use the GFerrari oven, wait until the red light disappears, then, when you put your pizza in the oven, put it on position 3. When you take out the oven, add some nori slices. Enjoy your meal!
