Yakisoba, delicious and popular noodles
Yakisoba, 焼きそば literally “stir-fried noodles” in Japanese, are noodles imported from China that were adapted by the Japanese. Today, it is a dish that is an integral part of Japanese cuisine.
It is both popular and inexpensive and is eaten on the go, like ramen or okonomiyaki or takoyaki for example. You can find it everywhere in Japan.
Its ingredients
These are fried noodles, yakisoba which have nothing to do with soba buckwheat noodles. Here they are noodles made of wheat flour, yellowish noodles. Stir-fried with thin slices of meat, seafood, shellfish and vegetables such as Chinese cabbage, leeks, carrots, beni, etc negi carrots, beni shoga (red pickled ginger) aonori and shiitake depending on the recipe, taste and region. A fried egg is often found on top.

The yakisoba sauce
In this dish is the famous worcester sauce, like the one of the brand Bull Dog brand, which can be found in many dishes, including sometimes in the okonomiyaki. It is a brownish sauce, sweet but not too much, which allows to combine all the ingredients and to bring a rich and inimitable taste. Some even add Kewpie mayonnaise.

The yakisoba
The noodles are stir-fried not in a wok but on a large hot plate called teppan . All the ingredients are mixed and grilled together on this plate thanks to 2 big spatulas.
The yakisoba kata
There is another form of yakisoba, the kata yakisoba. The difference comes from the preparation. The noodles are first fried in oil and then the ingredients are put on top. There is no mixing of the ingredients as in the classic yakisoba.
Its taste
This dish is really delicious, the sauce and its accompaniments are really excellent, there is a little taste of okonomiyaki, ramen and takoyaki. Almost all the ingredients used belong to the so-called umami tastes, hence this power, this roundness and this depth of taste in mouth! It is a dish that Japanese people like a lot and that we can easily find in yatai in the streets, in restaurants, in instant dishes and in the shops bento.
