If you like the karaage, or fried chicken fritters this recipe is for you! The crispy chicken karaage fritters are topped with a sweet and spicy sauce. This is an easy Japanese karaage recipe that you must try! The crispy exterior will perfectly match the tender interior of these chicken pieces.
For the spicy sauce, we use the korean Gochujang sauce which is also used in the spicy salmon avocado chirashi recipe as well as in the japanese yakiniku sauce. Gochujang has become an indispensable ingredient in our kitchen cupboards!

Japanese spicy karaage recipe, Korean style chicken fritters
Equipment
- 1 pan 20 cm diameter
Ingredients
Chicken
- 1 chicken leg
- 1 tbsp of sake for cooking
- salt and pepper
- 3 tbsp corn or potato starch
- frying oil
The spicy sauce
- 2 tbsp of gochujang sauce
- 1,5 tbsp of ketchup
- 1 tbsp of shoyu soy sauce
- 1 tbsp of mirin
- 1 tsp of sugar
- 1 tsp grated garlic
- white sesame
Instructions
- Cut the chicken leg into small bites, put them in a bowl and add the sake, salt and pepper. Mix and let it rest for about 10 minutes in the refrigerator.
- In a bowl, mix the ingredients for the spicy sauce, gochujang sauce, ketchup, soy sauce, mirin, sugar and grated garlic.
- Place your chicken on paper towels and place the potato or cornstarch on a plate. Coat your chicken with this starch.
- In a frying pan, heat some frying oil on medium heat (170 degrees) and put your chicken pieces coated with starch. Fry each side until golden brown. Place the chicken fritters on paper towels to remove excess oil.
- Wipe the pan with paper towels and place the spicy sauce and fried chicken fritters on top. Stir until the sauce coats the fritters. Arrange them in a bowl and sprinkle lightly with white sesame seeds to finish.

Tips for the spicy karaage recipe
Instead of chicken thighs, you can use chicken wings or thighs.
Be careful when heating the spicy sauce in the pan, do it on low heat otherwise the sauce may burn in the pan.
For frying, you can use sesame oil, it will give a tasty flavor to your spicy karaage.
