We had a real crush during our stay in Japan when we tasted for the first time the black sesame ice cream. It is very tasty! It is difficult to get it in France so we share with you our black sesame ice cream recipe. We made it without an ice cream maker, so you will have to stir it from time to time.
Before cooking, here are the necessary utensils:
- You will need an electric whisk or a food processor because you will need to whip up liquid cream.
You can quickly pop your utensils and cream into the freezer to get them nice and cold. The cream will rise much better.
- Ideally an ice cream maker, but if you don’t have one it doesn’t matter.
- A metal container that will fit in your freezer.
To make this ice cream, you will need black sesame paste, which you can find in Asian grocery stores and organic stores. Otherwise you can make your own black sesame paste recipe.
Black sesame ice cream recipe
Equipment
- Electric whisk or food processor
- Ice cream maker (optional)
- Freezer safe metal dish
Ingredients
- 30 cl whole fresh cream 30%.
- 100 ml plant milk (we took coconut rice)
- 2 egg yolks
- 80 g black sesame paste
- 100 g white sugar
Instructions
- In a bowl, whip the crème fraîche with an electric whisk.
- Whisk the egg yolks and white sugar in a bowl until the mixture becomes frothy and thick.
- Over low heat, combine milk and black sesame paste. Remove from heat before boiling, then pour into the egg and milk mixture.
- Add the fresh cream and mix well.
- Pour the mixture into an ice cream maker and follow the instructions
Without ice cream maker
- Pour the mixture into a metal bowl and place in the freezer.
- During freezing, 1 to 2 hours later, whip the mixture with a whisk or fork. Repeat the operation 2 or 3 times and leave in the freezer overnight.
